Description:

A talk by flavour historian Nadia Berenstein presented as part of Big Rock Candy Mountain’s exhibition Mouthfeel. Bernstein discussed the past century of taste cultivation, including how notions of “natural” and “artificial” became measured, manipulated, and manufactured. Her hour-long presentation closed with a question and answer period.
